Boneless pork bottom is the best way to go, according to its fat to meat ratio, which is about 30-40%. Need some inspiration for sausage seasoning? Try keeping it simple with whole peppercorn, fennel, and coriander seeds. Get your sausage seasonings ready by lightly toasting them in a pan before grinding them on top of your sausage along with salt and garlic. Then, simply feed your meat through the sausage grinder and you have your sausage meat. Once your meat is ready for stuffing, grab your sausage casing and put it on your sausage grinder attachment. This state-of-the-art technology will fill your sausage with precision in no time. Leave about 1-½ inches of space at the end of your casing so you can twist the ends. Once you've finished casing your sausages, you want to let them dry out for a while, overnight is ideal. When you get hungry, simply place your sausage in a pot with water and poach for ten minutes before searing in a pan.
