Expertly created for enthusiasts who take pleasure in crafting their own culinary delights, our Backwoods® Bacon Seasoning Cures are precisely what you need to transform your favorite meats into flavorful bacon. Crafted with a fusion of top-grade spices, our Venison Bacon seasoning provides all you need to make smoky, savory bacon from any ground meat. From wild game to domestic meats, our unique blends add that extra flavorful touch.
 
To prepare, we recommend using a mixture of 80% lean ground meat and 20% ground pork for best flavor. Dissolve the seasoning in water, mixing thoroughly with the meat until tacky. Line a loaf pan or 2" cake pan with disposable cooking sheets. Pack seasoned meat firmly, to avoid air pockets, then cover and refrigerate overnight.
 
Remove the bacon from refrigerator 2 hours prior to cooking or smoking. Then process in one of the following ways:
  • Smoker: smoke until internal temperature reaches 165°F (Follow manufacturer's directions that came with your smoker).
  • Oven: preheat oven to 200°F. Place bacon directly on the oven rack. Use a cookie sheet to catch drippings. Cook until internal temperature reaches 165°F
TIP: After cooling place bacon in freezer for 20 minutes. Cold meat will slice more easily.

Bacon is Excellent!

though it does not really taste like traditional bacon, it is a delicious breakfast meat !!....or any place you like some meat .
I am on my 3rd bag and everyone I have shared it with loves it. I make it with mostly venison and some pork so it is a lean meat.
Don't change anything about it !!

How many pounds of meat will one box cure? Thanks

One package will season 25 pounds of meat.

Can a 50/50 venison to pork ratio be used with this mix or does it have to be 80/20?

You can do which ever you prefer, however, we do recommend at least 20% fat be added to your venison to get the best outcome.

What seasoning will work for backstrap venison bacon??

Does the cure have to set for 24 hours? Please define "overnight".  What is the minimum cure set time?

I mix the meat one day and than the next morning I smoke the meat. It does not sit 24 hours.

Is this sweet? I hate sweet meat.

Each person has different tastes as to what is sweet. These are the ingredients for the seasoning. Salt, Dextrose, Sodium Phosphate (14.58%), Sugar, Hydrolyzed Corn Protein, Natural Hickory Smoke Flavor, Sodium Erythorbate (1.75%), Spice, Spice Extractives And Less Than 2% Silicon Dioxide Added As A Processing Aid.

Does the kit include seasoning and cure or do I need to buy seasoning yet?

This packages contains both the seasoning and cure to make your venison bacon.

In the measuring chart for 1 lb. of meat it says to use 1 tbsp 1 1/4 tsp. .  is the 1 1/4 tsp, 1 & 1/4 tsp or is it just one 1/4 tsp? Thank you

The measurement for one pound is 1 TBSP and 1 plus 1/4 tsp.

can you make smaller batches ?

What is cure for?

Cure is used to keep your meat safe while going through the slow cook process.

My venison bacon batch didn’t firm up in fridge overnight I followed directions on packet do I need to add more cure?

Was the curing salt pink in color? If not, this could be the cause. Unfortunately, add additional cure will not work. You can only add what is called for, otherwise, the meat can become unhealthy, and non-edible.
