Why does the o-ring pop off when I’m making Snack Sticks?

The back pressure of using the smallest stuffing tube can overload a stuffer’s piston o-ring. Particularly the 20 & 30 lb. Motorized Stuffers that continually press with a high amount of force.

Here are a few tips to help alleviate that pressure:

    • It is best to use 2 to 2.5 ounces of water per pound of meat you will be making.
    • Mix the seasoning in the water then mix this slurry into the meat. Once tacky stuff meat immediately. The protein extraction process will keep happening and firm up the meat even more after a half hour or so. It is best to stuff the snack sticks as soon as possible.
    • Use the largest stuffing tube the casing will allow.
    • Do not use off brand stuffing tubes smaller than the ones provided with your LEM stuffer. Using smaller tubes than what the unit was designed for can cause o-ring blow outs as well as damage gears and can void your warranty.
    • Lubricate the piston and meat canister with cooking oil to reduce friction.
    • With Motorized Stuffers dial down the stuffing speed.

How do I get all the meat out of the cylinder?

On your last canister of me you can put a layer of slices of bread on the top of the meat to displace more of the meat at the bottom of the barrel. You can also you use our Silicone Dual- Headed Cleaning Brush to push the last bit through your stuffing tube.

Why is my stuffer so hard to crank?

When stuffer become very hard to crank they may have gone out of alignement where the plunger and frame.

Which stuffer can I use grinder attachments with?

With the purchase of the BigBite Stuffer Adapter (#12095008) you can use BigBite Grinder Attachments with #1111, #1112, #1217, #1219, #1569.
