Crafted with a fusion of top-grade spices, our versatile seasonings are perfect for enhancing the flavor of snack sticks. Original Snack Stick Seasoning is the perfectly-balanced blend of spices will give your wild game or domestic meat cured sausage that classic snack stick flavor you crave and contains mustard for a unique twist.
 
To prepare, simply grind a mixture containing at least 20% pork or pork fat and then dissolve the seasoning in water, mixing thoroughly with the meat. To make sticks with the Jerky Cannon, start by using it to shoot the mixture onto a cookie sheet. Preheat your oven to 200° F, then place the sticks in the oven to bake until the internal temperature reaches 165° F. Alternatively, you can stuff the mixture into natural sheep casings or 17-21mm collagen casings. Smoke the stuffed casings in a smoker or bake them in the oven at 180° F until the internal temperature reaches 165° F.
 
Each package contains a pre-measured packet of cure.

Snack sticks
I’ve used this seasoning several times now. In the oven and in a smoker with hickory smoke. Both ways turn out great but everyone prefers the smoked ones. I use natural sheep casings. They always taste great and go fast.

can I stuff the casings and refrigerate over night and smoke the next day

Yes! I would suggest letting the sticks sit out for about 1-2 hours before smoking.

If I was to use beef, what type of beef should I use? Would I need to add pork? Could 80/20 hamburger work?

Beef tastes great with our Backwoods Seasonings! You want the LEAST amount of fat in your jerky/snack stick meat as possible. We recommend going with a 93/7 blend or HIGHER!

What is the amount of mix for 2 or 3 pounds of meat?
The directions recommend using 20% pork or pork fat, is this necessary? How would the snack sticks turn out if I would make the sticks using 100% venison?

If fat is not use the snack stick will be very dry. Besides adding moisture pork fat will also add flavor. It is a per person preference how much to add or not add. Do some testing and find out what you like best. Direction on the package is suggested but not mandatory.

Do the collagen casings need to be wet or do I stuff them while dry?

Our Edible Collagen Casings do not need to be wet. Simply take them out of the package and put them on the stuffing tube.

Is the 100lb bulk seasoning bucket have individual 5 lb packages ?

The 100 lb. bulk size comes in one large bag inside a resealable plastic bucket with handle. The included cure is packaged separately. Take as much out as you need, snap the lid back on and store in a cool, dry place for later use.

Is the cure already in the seasoning packet ?

Yes, any of our seasoning that requires a curing process will contain the curing salt in a separate package inside the seasoning packet, kits or buckets.

After I mix the meat and seasoning packet does it need to rest for 12 hours or can I use right away?

You can process right away or refrigerate up to 12 hours before processing. The cure used is an instant cure #1.

I use this product yesterday my ? Is why did my sticks get so salty

I'm sorry to hear this. Please make sure to follow the measurement chart precisely. If it's too salty, it seems like too much was added.

Can you leave out the water asked for on the back of the seasoning packet when mixing the ingredients with the ground meat?

The water isn't 100% necessary but it helps distribute the seasonings evenly and prevents air pockets that can form otherwise.
