Preheat your oven to 200° F, then place the sticks in the oven to bake until the internal temperature reaches 165° F. Alternatively, you can stuff the mixture into natural sheep casings or 17-21mm collagen casings. Smoke the stuffed casings in a smoker or bake them in the oven at 180° F until the internal temperature reaches 165° F.
