Uniquely blended for those who enjoy creating their own culinary delights, our Backwoods® High Temperature Cheeses are just what you need to transform sausages, snack sticks, and burgers into flavorful masterpieces. Our High-Temp Cheddar Cheese has a rich, creamy, and full-flavored cheddar taste that brings tang and color to burgers and sausages. This 100% real cheese is specially formulated to retain its shape and flavor up to 400° F, and comes pre-cut in 1/4" cubes.
 
To use, add to your meat in a 1:10 ratio (1 lb. cheese to 10 lbs. of meat) after the second grind, stuff, and cook as usual.
 
Available in two sizes:
1 lb. (16 oz.) Bag - mixes with 10 lbs. of meat
5 lb. (80 oz.) Bag - mixes with 50 lbs. of meat

Great cheese
This is not the first time we have used this cheese. We put it in summer sausage and meat sticks. It tastes great in both. We highly recommend it.

Does cheese have to be done through stuffer or can it be ran through grinder?

We don't recommend processing the cheese while grinding your meat. Do the grind first and then mix in the cheese.

Ordered high temp cheese 11/19/2020 did not refrigerate until Christmas Day is it still ok or do I need to throw away?

Our High-Temp Cheese will last two weeks or longer not refrigerated as long the package was not opened.

Can this cheese be shipped 3-5 day shipping without spoiling?

Yes, our High-Temp Cheese can be shipped without spoiling. It will last up to two weeks or longer not refrigerated.

Can this cheese be used in burger patties as well?

Yes, it is great in burgers.

is this product cheese only or do i need a seasoning and preservative to go with it?

This product is just high temperate cheese. It is added to sausage or burger recipes to give them that extra cheesy dimension.

I purchased a couple of bags of cheese several months ago and forgot to put them in the fridge. They are unopened packs. Are they still good?

Our Hi-Temp Cheese will keep up to 2 weeks at room temperature as long as it is not mixed with anything and is in the original airtight package. It is Shelf Stable for 12 months under refrigeration.

If kept in the fridge un opened how long with the high tempered cheese last?

We recommend 1 year from date of purchase for any cheeses and seasoning.

Do you make a low sodium brat ?

Not at this time, however I will pass along your suggestions. Right now, we offer Reduced Sodium Summer Sausage SKU # 9159 & 9160, Original Jerky SKU # 9152 & 9158, Snack Stick SKU # 9161 & 9162 & Breakfast SKU # 9163 & 9164.
