Uniquely blended for those who enjoy processing their own foods, our Backwoods® Jerky Seasonings are just what you need to transform your favorite meats into a culinary delight. Crafted with a mouthwatering blend of premium spices, our versatile seasonings are perfect for marinating strips of meat or mixing with ground meat. From wild game to domestic meat, our unique blends add that extra deliciousness to any meat dish. Our Original Jerky Seasoning mix has been around since the days of the Western frontier, and has the perfect balance of savory and smoky flavors.
 
To prepare using the marinade method, slice your chosen meat to your desired thickness, immerse it in water and seasoning mixture, and refrigerate for 8 hours. For the ground meat method, combine meat with a water mixture until tacky and form into strips. With both methods, cook in the oven at 200°F for 1 hour and 15 minutes on each side, or dehydrate according to your dehydrator's manufacturer's instructions. Then refrigerate or freeze your finished product.

Lem original flavor jerky seasoning and cure
First time using Lem original jerky cure it turned out fantastic. Taste was great will definitely be using this again. Had 5 lbs of eye of the round beet used packet of original for 5 lbs of meat made the full muscle style and it was delicious. Shared with several friends who also loved it

I'm using ground turkey so do i mix jerky seasoning (original) with water & cure then dehydrate? Ive never used water just want to be sure

It is not mandatory to use water. We have found for best results and evenly seasoned meat we suggest adding at least 1 oz of water per pound of meat. First add seasoning and cure to water and blend until dissolved then pour over your meat and mix in. The water helps to disburse the seasoning and cure evenly throughout the meat mixture.

I have an unopened pack of jerky seasoning that is probably at least 2 years old. Does it have an expiration date? Is it ok to still use?

Yes, an unopened package has an indeterminate shelf life. Our seasoning is like any other spices, the longer they are kept the less potent they become. It is best if used within a year or 2.

Just got the jerky rack and considering a test flight using the oven. I will probably be getting a dehydrator in the near future but am wondering if I have to make any adjustments when using a GAS oven? My oven will only go down to 170deg. . Should I set it higher since I hear that natural gas is not as dry as electric? Thanks...RWB - Tulsa

I'm uncertain of the answer. But i would suspect it will work the same. I would suggest setting the oven to the lowest temperature and then opening the oven door slightly by putting a wooden spoon in the way so it will not close, this will allow moisture to escape. After the first hour you may want to check the jerky, turn it over and or rotate the tray. Flipping the jerky after the first hour also helps the jerky not stick to the rack.

Can I use this as a dry mix with ground deer meat??

Yes, many of our customer use our seasoning with their deer meat to product sausages, jerky and other great products.

Do I need to rinse the strips of meat after the marinade process?

We just dab them dry and put them on racks to be smoked and then dried, No need to rinse unless you want a very mild and lower salt flavor.May also reduce their stored stability.

Does the Jerky seasoning require water or can it be mixed in dry ?

Ive don't it both ways.. both ways work, but about half the water they advise works best for me

Does the 100 lb bucket come with the cure included?

Yes, cure is included.

I made a batch of original but ended up with only 4 lbs 4oz of instead of the recommended 5 lbs.  is this ok?  The instructions to say not to use more cure than recommended which has me worried that I didn’t have 5lbs of meat

Is it harder to mix and get the same flavor when buying in bulk?

It shouldn't be. Just make sure to measure carefully when mixing. Just follow the measurement chart provided.

Does the Original have smoke flavor?

There is a slight Smokey flavor to it. Buy it and you will love it, it’s the best jerky seasoning you will find. I’ve been buying it for over 20 years and I have never found one that compares. The only thing I ever do is maybe add a tsp of crushed red pepper to 5 lbs.
