Expertly created for enthusiasts who take pleasure in crafting their own culinary delights, our Backwoods® Cured Sausage Seasonings are precisely what you need to transform your favorite meats into flavorful sausages. Crafted with a fusion of top-grade spices, our Pepperoni seasoning has has a bold, spicy flavor that's similar to traditional pepperoni and is great on pizza. From wild game to domestic meats, our unique blends add that extra flavorful touch to any sausage.
 
To prepare, simply grind a mixture containing at least 20% pork or pork fat and then dissolve the seasoning in water, mixing thoroughly with the meat. To make sausages, roll in logs, rolling back and forth to remove air, or stuff into fibrous or non-edible collagen casings after they have been soaked. Then, preheat your oven to 300°F and place the log in for approximately an hour or until the internal temperature reaches 165°F. If using a casing, after stuffing, refrigerate the sausages overnight to allow them to set. The following day, preheat your oven to 180°F and cook in the oven, or smoke it in a smoker until the internal temperature reaches 165°F. Remove and cool. Refrigerate the finished product to maintain its quality and freshness.

Pepperoni Seasoning
Good seasoning and nice taste. I did not use the cure since I seasoned the pork meat (80/20) and pan fried the meat and placed it on top of my homemade pizza.

Recommended to all.

Does the pepperoni seasoning contain any onion powder, molasses or brown sugar?

The ingredients listed on the package for the Pepperoni include: salt, spices (including ground mustard), sugar, msg, garlic powder, sodium erythorbate, spice extractives, paprika. Unfortunately we do not have the break down of the ingredients any further. So I cannot say for sure if the spices you mentioned are included.

Does the pepperoni seasoning come with casings?

This seasoning does not include casings.

when making summer sausage and pepperoni are you grinding the meat once or are you doing a double grind with the second going through a 4.5mm plate?

This is a personal preference. You can grind twice using the 4.5 MM plate on the final grind, or you can grind only once using whichever plate that will give you the consistency of the meat prefer.

What lean/fat ratio should I use for the ground beef? Should it be very lean beef since I'll add 20% pork?

A lean beef would be best.

Can I skip adding the cure?   My husband cannot have nitrates, they cause migraine like headaches.   I was planning on making it, slicing and storing frozen.

The cure should be used to control botulism.

Is this the same seasoning that comes in the snack stick variety pack?

Yes, it is.

Can I use this with ground beef to make jerky in my dehydrator? I normally use the Lem jerky packets but there isn’t a pepperoni jerky packet.

You can absolutely use this. It will make some really good jerky!

Can I use this seasoning to make snack sticks using sheep casings or collagen edible casings?

Yes, you can absolutely use Backwoods Pepperoni Cured Seasoning to make Snack Sticks with either Sheep Casings or Collagen Casings.

At 180 how long will I need to keep them in the oven

All ovens are different and temperatures can fluctuate. It will take anywhere from 6-10 hours, sometimes longer. We always suggest relying on your thermometer not the time.
