Easy Ground Venison Alfredo

If you have ground venison in the freezer, this is an easy way to turn it into a hearty weeknight dinner the entire family will love. The venison is seasoned and browned, then simmered right in a creamy Parmesan Alfredo sauce and tossed with fettuccine. It’s rich, comforting, and comes together in about 30 minutes—exactly the kind of wild game meal I love for a busy night.

Ingredients

Ground Venison

  • 1 lb ground venison
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp freshly cracked black pepper
  • ½ tsp Italian seasoning
  • ½ tsp smoked paprika
  • 1 tsp Worcestershire sauce

Alfredo

  • 12 oz fettuccine
  • 3 tbsp butter
  • 3 cloves garlic, finely minced
  • 1½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese, plus more for serving
  • ½ tsp salt
  • ½ tsp freshly cracked black pepper
  • ½–1 cup reserved pasta water
  • 2 tbsp fresh parsley, chopped, plus more for garnish

Instructions

  1. Bring a large pot of well-salted water to a boil. Cook the fettuccine according to the package directions until just al dente. Before draining, reserve 1 cup of the pasta water.
  2. Heat a large deep skillet over medium-high heat and add the olive oil. Add the ground venison and break it apart with a spatula. Sprinkle with the salt, garlic powder, onion powder, black pepper, Italian seasoning and smoked paprika. Cook the ground venison until just browned, stirring occasionally. Stir in the Worcestershire sauce and garlic and cook for another 30 seconds.
  3. Reduce the heat to medium. Add the butter directly to the skillet with the venison.
  4. Pour in the heavy cream. Bring to a gentle simmer and cook for 2–3 minutes, stirring occasionally.
  5. Reduce the heat to low. Slowly add the freshly grated Parmesan, stirring constantly until melted and smooth.
  6. Add the cooked fettuccine to the skillet and toss until completely coated in the Alfredo sauce. Add reserved pasta water a little at a time until the sauce reaches a smooth consistency that coats the noodles without being too thick.
  7. Stir in the fresh parsley. Add any additonal salt and pepper to taste if desired. Serve immediately with extra freshly grated Parmesan and parsley for garnish.
