Expertly created for enthusiasts who take pleasure in crafting their own culinary delights, our Backwoods® Cured Sausage Seasonings are precisely what you need to transform your favorite meats into flavorful sausages. Crafted with a fusion of top-grade spices, our Bologna seasoning is every kid's favorite and is perfect for enhancing flavor. From wild game to domestic meats, our unique blends add that extra flavorful touch to any sausage.

To prepare, simply grind a mixture containing at least 20% pork or pork fat and then dissolve the seasoning in water, mixing thoroughly with the meat. Next, stuff into rounds, fibrous, or non-edible collagen casings (soak casings in warm water prior to stuffing). Finally, cook in preheated oven at 180°F or smoke in a smoker until internal temperature reaches 165°F. Once cooked, refrigerate the finished product to maintain freshness and quality.

Each package contains a pre-measured packet of cure.

Worth it and tasty
First time making venison bologna, used this seasoning because lem has never let me down. My fried bologna egg and cheese sandwich was mighty tasty this morning

Really good flavor. Very satisfied
Fully recommend for making bologna, venison or regular. Made 2 batches, one venison batch and one 50/50 pork and beef. Both came out great. Was able to adjust water amount and use some worchestishire sauce for added flavor

100% love it.
Awesome flavor! I also like the Jalapeño Summer sausage and Salami. Eating the three;
1. Jalapeño summer sausage
2. Trail Bologna
3. Salami
But I will always try and make all three depending on how many deer I harvest and store availability. The Sportsman’s Warehouse in Roanoke VA. Always drops the ball on stocking your products during hunting season. Two hunting seasons in a row they where out of your seasoning mixes two weeks in (muzzleloader)

Here goes ! its states the cure is for lbs of meat... example I grind 5lb of lean meat (venison,) and use the cure packet for the 5 lbs of meat... my final mix amount will be roughly 6.25lbs after I include my fat content. Is this correct or do I up my cure to equal final mix amount?

The total weight of your meat/fat should be 5 lbs., with a 80/20 blend.

.?I want to use lamb mixed with pork shoulder which seasoning would you recommend. Ed.?

You could mix lamb with any sausage you like. Sweet Sweet Italian and Breakfast Sausage may compliment the taste of lamb well. Have fun exploring!

Does casings come with the kit?

Casings are not included with the seasoning packets, will need to order collagen rounds, if you want the curved, or straight casings separate.

Hello, I would like to make ring balogna, what type and size of casings do I need? If I plan on pan frying these do they need to be cured?

Three types we carry are the most traditional. Fresh hog casings(formed into rings prior to cooking), beef founds (have the natural horse bend to them), and collagen rounds (also have horseshoe bend, non edible, not recommended for pan frying).

If you only intend to pan fry your sausage immediately, like you would a fresh breakfast or Italian sausage, you would not need cure. If you intend on low temp smoking them, even if you intend to pan fry after, you would still need to use the Cure to be safe.

Does this taste like kahns bologna or trail bologna?

Tastes like bologna the flavor is perfect! We add dried jalapeños and the high temp cheese it’s great highly recommended!

Can you Sous vide the bologna instead of baking in an oven or smoking? If you can what temp and time?

We have not used Sous vide cooking with this seasoning.

Has anyone ever tried adding sliced green olives to this bologna seasoning ? Would it taste like a P&P bologna?

We have not tried it but the olives would add extra moisture to your mixture.

every recipe for cured bologna I have used calls for overnight refrigerated curing before cooking why not yours?

Our cure is an instant cure, it is ready to process after your have mixed the seasoning/cure product and meat. You can refrigerate up to 8 hours if you desire.

Can you use turkey?

Yes you could. Make sure you add 20-30% fat content.

Can you use beef instead of pork to make bologna?

Absolutely, yes! You can use any type of meat you have on hand.
