Crafted with a fusion of top-grade spices, our versatile seasonings are perfect for enhancing the flavor of snack sticks. Pepper Snack Stick Seasoning creates a stick with a kick! This perfectly-balanced blend of spices will give your wild game or domestic meat cured sausage a peppery kick that'll have you craving more.
 
To prepare, simply grind a mixture containing at least 20% pork or pork fat and then dissolve the seasoning in water, mixing thoroughly with the meat. To make sticks with the Jerky Cannon, start by using it to shoot the mixture onto a cookie sheet. Preheat your oven to 200° F, then place the sticks in the oven to bake until the internal temperature reaches 165° F. Alternatively, you can stuff the mixture into natural sheep casings or 17-21mm collagen casings. Smoke the stuffed casings in a smoker or bake them in the oven at 180° F until the internal temperature reaches 165° F.

Pepper stick seasoning
Usually use my own recipe, but decided to try the pepper seasoning and it really came out good

Creative variations
I use the pepper snack stick mix for my summer sausages. 7.5 lbs of 80/20 ground plus some extra spices(garlic and onion powder, corse black pepper, soy sauce and Worcestershire) to make up for the extra meat and high temperature cheese(small can of diced jalapeños if I’m making it for someone who requests extra spicy). This will fill 10 1.5”x12” fibrous casings.
I use an electric smoker that has separate smoking and cooking capabilities, I smoke with hickory for about 3 hours at 220deg and then continue without smoke until proper internal temperature is reached.
Because I hang my sausages I do rotate them about every hour to help with even cooking.

I shot an eight point buck this year and butchered it myself with the help of my kids. We made pepper sticks, jalapeño cheddar, summer sausage, and jerky using my LEM meat grinder and my LEM sausage stuffer. Everything turned out great very satisfied.

Very tasty!!!
It was easy to use! I added 1 pound of ground pork to the venison and a cup of high temp pepper jack cheese plus a little apple sauce and then smoked them for 90 minutes. Great taste!!!
