The BEST casing for making truly vegetarian/vegan seitan hot dogs and sausages.
I have been on WeightWatchers for just over a year -- lost 82 pounds to get to my goal weight of 185 lbs. During this time, I have learned a bit about seitan and have finally developed a killer recipe for seitan vegetarian hot dogs which are a mere 3 WW points (6" bun length x 10 or standard 4.5" x 14 per recipe). But I needed a vegetarian casing for those WW members who don't want to eat collagen casings (and won't eat natural casings). LEM to the rescue with these plastic casings. The photo that accompanies this review was my first effort (triple recipe, bun length dogs).

I discovered that I needed to use twine to keep the dogs portioned, and twisting the casings between dogs made them nice and tight. I steamed a string of 4 without wrapping in foil (45 minutes as I normally do for seitan sausages) to see how the casings worked. What I discovered was the unwrapped seitan swelled out of the two ends and one dog in the middle burst out of the casing. So I wrapped the remainder of the batch tightly with sheets of "pop up" foil. You'll see that I did have a couple of "blow outs" -- these were just not wrapped tightly enough in the foil to contain the swelling seitan. The rest were absolutely perfect! I stuffed these with my KitchenAid mixer -- I was able to get a bit more than 60" of casing on the stuffer tube, enough to stuff 10 bun length dogs.

I'm glad I ordered two packages of the casings, because I'm going to have fun making a bunch of dogs to vacuum pack and freeze -- these are the first hot dogs I've eaten in over a year! Maybe LEM will let me post my recipe here or pass on my email address so you can write for it.

Great for making vegan sausage, my only wish is that they made a larger size so I could do different styles like pepperoni!

Excellent casing!
I make vegetarian hotdogs with wheat gluten. They are cooked in a pressure canner. The casing performs very well and handles the pressure of the gluten while cooking. Here is a picture of an 8 pack before labeling.

Can you twist the casings after they are fully stuffed like you would with regular hot dogs? Or will they break if i TRY THIS

I found they are hard to keep twisted so I took about 3 foot sections and tied them into links with twine. Then hung in the smoker to finish. If you overfill, they will split just like natural casing will but you can twist or tie it. I just couldn't keep them twisted but that might just be me.

Will these not off gas into the food ?

What size horn is used for this size casing?

A 1/2" tube or smaller will work for this casing.

Do not have smoker. Is it necessary for finished hot dog?

If you are using cure during your processing you can use a smoker, dehydrator or oven method. This 26mm plastic casing,  will it make red hotdogs? I'm actually looking for casings that will make red hotdogs.

yes they look just like the ones you buy at grocery store.

I see the hotdog casing will produce 27 lbs. How many feet is one tube and how many tubes are in a pack?

The casing is not sized by feet, it is sized by the amount of meat the casing can hold.

Hi, are these casings vegan and if not do you supply vegan casings that can be boiled in water??

All of our fibrous casings are vegan friendly. Fibrous casings can be boiled.

The following question was asked but was not exactly answered so I am asking it again here :) Will the casing allow smoke to permeate into the franks? If so, is there a recommended amount of time due to how easy/difficult the smoke permeation is?

You say they are not to be used in a smoker yet the instructions say they can be used in a smoker with a water pan. This is a repeat of the situation the previous guy asked lol (deja vu) So when you reply back saying oh yeah they can be used in a smoker with a water pan please be sure to cover whether or not smoke can/will permeate the casing :) LEM: These casings do not take on smoke. You can, however, put them in a smoker to steam cook them. That process would be: 1) heat smoker to 180 deg 2) put hot dogs in smoker 3) put water pan on burner or turn on steam (if your smoker has that option) to steam cook 4) when internal temp reaches 165 they are cooked 5) remove from smoker and place in cold water to drop the temperature of the hot dog to stop the cooking. Peel and ready to eat.
