Effortlessly trim away silver skin for the best cuts! Silver skin is a thin membrane of tissue often found on venison and other game. It does not allow spices or marinades to permeate and unlike fat it will not melt away when cooked. If not removed, it may leave meat gristly and gamey. The LEM SilverSkin® knife kit includes one safety glove, two blades, and purpose designed pliers to help you safely trim away silver skin so you can "eat better meat". One year warranty. Chris Stafford was born and raised in Larkspur, California, and developed a deep love of barbecue in his early 20s after spending a few years living in Arkansas. After returning to California to finish up school and pursue a career in Technology, he began selling Central Texas inspired barbecue on a platform called Shef, before ultimately forming Lone Mountain Barbecue in Marin County, California.

Good product for a tough job
It’s easy to use and makes light work of a time consuming job. The design fits good in your hand and makes for less strain on your hands. It has cut our work time down considerably. Easy to use and easy to clean up and store.

What a timesaver!
This is such a timesaver! For years we removed the silverskin with a regular knife, taking care to not get into the meat. This cuts the time down immensely. From 10 minutes to about 2 minutes. We highly recommend this item!

Reduce your silverskin effortlessly!
I love it. I’m used to an electric fish knife so this was so easy to get used to. The guide is awesome too. It reduces waste tremendously. It feels very comfortable in your hand, is very powerful and sharp. We trimmed away a lot more silverskin than we used to.

Can it be used to remove silver skin on ribs ?

I use it to remove silver skin on deer meat in general- have never bothered with ribs

We do not sell just the knife without the pliers, glove and other items in the kit.

The blade is not flexible enough when removing the skin from fish, also it would take more of the meat from the filet than desired.

Do you have longer blades so it can be used for trimming turkey or slicing prime rib ?

We do not offer longer blades.

Will this take off SS and membrane on hind quarters?  You show it on back strap but nothing else.

Yes the knife does take off SS on hind quarters. It may not take off as long a strip as on the back strap, but it does work on hind quarters.
