Upgrade your food processing routine with our #1-3/4 x 24" Mahogany Collagen Middles. Engineered for ease of use, these casings eliminate the need for complicated preparation, allowing you to create perfect sausages effortlessly. Ideal for a range of dry and semi-dry sausages, these straight, long casings have a heavier texture wall with some fat, so they shrink with the meat, thus eliminating the loose, wrinkled casing you sometimes get with a fibrous casing, and they are strong enough to hold the weight of the meat while hanging in a smoker. The casing peels away easily when cooked. After a simple saltwater pre-soak, these casings are ready to help you craft an array of delicious sausages. Non-edible.

2 1/2” casings
The casings were exactly as advertised. After a soak in warm water I put them on stuffing nozzle and the filled evenly and smooth. When I cut the cooked sausage it slices easily and the casing peels right off. Will continue to use next season

DO THESE CASING HAVE TINY HOLES IN THEM?

How many pounds they hold for each casing ?

They hold approximately: 1-3/4, 3lbs. per casing

My oven will only go down to 170 degrees. Is this a problem?

No, you just need to make sure the internal temperature of the sausage reaches 165 degrees. At this point you can place the sausage in a cool water bath to stop the cooking process.

How many pound of meat do the 2 1/2 ×20 casings hold?

Holds approximately: 1-3/4 - 3lbs. per casing

If I soaked the casing and didn't use it can I soak it again and use it?

Yes. Make sure they are completely dry and then stored in airtight packaging.

What is the difference in Mahogany casings and clear casings?

The casings are the same, one has color and the other is clear. They still function the same.

I have a 3/8 tub do the make a casings for it?

What specifically are you making, we can then make a recommendation what casing will work best for the job.

will smoke absorb thru the fibrous casings?

Yes, the smoke will create a ring around the sausage but will not pass all the way through the meat. Also, the casing shown is the Mahogany Unprinted Collagen Middle which is made from beef protein and your question asked about fibrous casing which are made from a paper pulp material, each will accept smoke.

How long can the casings be stored?

If unopened store them in a cool dry place in the original package up to 1 year.

How long can the casings be stored?

I have a few leftover for sometime. I have mine in a zip-lock stashed in a kitchen cabinet. That last time I used l let them soak as recommended and had no issues when used. Keep them sealed in a decent climate, not exposed to excess heat or cold and you should be good. ENJOY!
