Engineered for ease of use, these casings eliminate the need for preparation, allowing you to create perfect sausages effortlessly. Crafted from beef protein, fresh collagen casings are used specifically for making fresh sausage. They are durable, hold up well when hung in a smokehouse, offer a consistent color and texture, and provide a satisfying snap when cooked. With no soaking required, these casings are ready to use as soon as you are. Come rolled in strands; each is approximately 50' long. Edible.
 
Choosing the Right Size Casing:
21mm are great for breakfast sausage links, and 32mm casings are ideal for Brats or Italian sausage.

Collagen casings
I like the smoked collagen casings. I used these a couple of years ago with mixed results due to user error.
This season I was careful not to overfill the casings. I did this by leaving the grinding plate attached for a second grind as I ran the sausage through the horn. The more open stuffing plate allows the sausage to flow a lot faster which was the mistake I made on my first attempt a few years ago.
So…. That being said…
-use the grinding plate to slow down and control the feed
-pay careful attention not to overfill casings (which will cause them to burst)
- use a pricking pin(I used a corn on the cob holder) to pierce the collagen links up and down the sides a few times to relieve some of the pressure as the links are smoking… this too will help keep the casings from bursting.

I recommend these casings for anyone that wants to up their game on stuffing saysage.
Great on the grill. The casing was easy to bite and had just the right texture.

Beautiful and tasty
First time making snack sticks. Easy to use but word of warning, use a sausage press, meat grinder is brutal and very time consuming. Sticks turned out beautiful as you can see by the picture. Casings are tuff and easy to use.

Perfection at it’s best
They worked out perfectly, we made 80 venison brats and upon completion we grilled up a batch to perfection. LEM casings have always performed without any issues whatsoever.
