Upgrade your food processing routine with our Natural Hog Casings. They are made from the submucosa of the hog's small intestine, a layer of the intestine that consists of naturally occurring collagen. Natural Hog casings are the traditional choice when making any type of link sausage. They are flexible, easy to stuff, are durable enough to hold up to smokehouse processing, and ensure your sausages remain juicy and tender with a distinctive "pop" when bitten into. Preparation is as simple as rinsing and flushing in cold water to remove brine and salt, then soaking them in cold water for 2-8 hours until soft and pliable. The casings are universally compatible and work seamlessly with any sausage stuffing equipment. Approximately 32-35mm in diameter. Edible.

Great Breakfast Sausage Seasoning
I thought I’d make some elk breakfast sausage and used LEM’s breakfast sausage mix for 5lbs and sheep casings. It turned out very well, even my wife enjoyed the taste. Although being a novelist at sausage making, I did have some ruptured casing while making links, so I just turned them into patties, partially froze them then vacuum pack them. I would buy this seasoning again.

Hog casings
I purchased the casings for making smoked sausage, cheddarwurst and polish. Casing were as advertised, shorter runs but in good condition, no tears.

should I refrigerate unopened natural hog casings ?

Yes, return to a container that can be sealed, add salt to cover the casings, tighten lid and refrigerate for up to one year. If you see black spotting or they have an ammonia smell, you'll need to discard them.

Yes, warm water works best. You'll need to rinse both the inside and out of the casing and soak at least 30 minutes or until the casing are pliable.

There is not a date code on the package, but the shelf life of the Natural Hog Casings will be about 2 years if they are in the original unopened package.

Yes, the Natural Beef Rounds are a good choice to make your Soppresatta sausage. Do know, these casing a not edible.

I have been using your casings for a long time and they all have been in grate mounts of salt very shrived up this last pack I received looks like it has already been soaked I see no black spots but are they ok I don't want to make 25 lbs. of sausage and its spoiled or family gets sick

The supplier has added more brine to the packaging than what was used in the past. As long as there is not a foul odor or black spots, they are good to use. Proceed with your same preparation process of soaking prior to use.

Yes, if unopened the can last up to one year. As long as you don't see black spotting on the casing they should be fine to use. If open, store in the refrigerator in a sealed container or you can seal a bag with your vacuum sealer.
