Great Book for marinades and brining!
Great overall guide on how to brine and marinade different kinds of foods. Less of a cookbook and more of a great resource huide on how to incorporate new flavors into preparing a wide range of foods. I have really enjoyed it.

The Smoked Foods Cookbook
This is a great book for beginners as well as more advanced smoke cookers. Lots of recipes and ideas for rubs and brines, great explanations about the different methods of smoking, types of smokers, and so much more. I just wish I had remembered that I already had a copy, so the one I just bought will be regifted to a friend.
